The idea here is to spend as little time in the kitchen as possible so that you can focus on the main goal of losing weight.Also the food needs to be delicious else you will lose interest in the diet menu. My preference is to have roast chicken for lunch or as salad or in soup or even use them as add-ons in roasted veggie meal.
Recipe for Roast Chicken
Chicken- 1kg (You can substitute with Boneless chicken breasts if you need to use the same chicken in salad or soup)
Vinegar- 1-2 tbsp ( You could substitute with thick yogurt 1/2 cup with half a tsp of chaat masala, if you do not prefer vinegar)
Red chilly powder- 1/2 tsp/ depends on taste
Ginger garlic paste- 2 tbsp
Pepper- 1 tsp oregano – 1 tsp
Olive oil- 1 -2 tsp (Omit if you feel you do not need the oil. The natural oil of the chicken will do the trick)
Onion- 2, finely cut
Salt – To taste
Combine all ingredients and set aside for half an hour. Pour in a microwave glass dish. Roast in the microwave until done. For Kenstar I use the pre-cook roast chicken mode which uses the grill method.
